FOODWAYS

These people are skimming molasses at an evaporator pan. The southwestern part of West Virginia is an area where sorghum molasses is commonly made. Local demand is so high that little, if any, reaches an outside market.   (FL1098G)

This man is feeding a three-roller cane mill at a molasses making in Braxton County. Because it is labor intensive, whole neighborhoods usually participate in the making, a holdover from the early tradition of having “workings,” or gatherings in communities for getting a lot of work done quickly     (FL1195N)
